Oh how I love my cast iron skillet! Getting it properly seasoned can be an arduous task but it’s so worth it! The more you use it, the better it gets. With that in mind, I have compiled a list of 7 things to cook in cast iron.
#1 Asiago Potatoes
This pan full of potatoes, half & half, and cheese with a golden brown crust is heavenly! The even heat distribution created by the cast iron skillet cooks the potatoes evenly to the perfect texture, and melts the cheeses and half & half into a creamy sauce. Asiago potatoes are the perfect side dish for any meal!
#2 Toasted Sandwich
I love using cast iron for toasted sandwiches! The combination of mayonnaise and melted butter for toasting the bread is the secret to the perfect crunch!
#3 Jalapeno Cheddar Cornbread
Jalapeno cheddar cornbread is a savory cornbread that goes really well with soups and stews! This time of the year soups and stews are a huge part of my diet.
#4 Caramelized Onions
Speaking of soups and stews, how about caramelizing some onions to add extra flavor to your favorite soup recipe. Cast iron is perfect for caramelizing onions because onions won’t caramelize in non stick pans!
#5 Chicken & Biscuit Pot Pie
How about chicken & biscuit pot pie? This one pot meal can be served right out of the dish it is cooked in! I’m all about having fewer dishes to wash!!!

These golden skillet potatoes are one of my favorites! There’s a nice crust on the outside of the potatoes while the inside stays tender. They’re a little spicy, a little cheesy, and they are incredibly flavorful!

I often use cast iron to cook ground beef which I used in my zesty beef enchiladas pictured below. No Cinco de Mayo celebration is complete without a large pan of these!
