This week is all about meals on the go. Most of us have a really hectic schedule and need something to grab and go. If I want to eat healthy, I have to prepare ahead of time. With no preparation, I would most likely be found at the drive through window most days. Chia seed pudding is an easy and healthy breakfast or snack that can be made ahead of time!
On the weekend, I make a large batch and portion it out in sealable containers so that I have breakfast ready to go each morning. Being prepared for the entire week makes Monday morning a whole lot easier to bear.
This is a really simple recipe with only a few ingredients. I whisk together unsweetened almond milk, non fat greek yogurt, honey, vanilla, and salt until just blended. Then I stir in the chia seeds.
Let the mixture stand out on the counter for about 20 minutes to allow the chia seeds to plump up.
Then stir to redistribute the chia seeds, and refrigerate 2 hours to overnight.
Portion out your chia seed pudding in sealable containers.
Top with fresh or frozen berries and nuts for some crunch.
Right before I leave, I drizzle the top with some honey and off I go! Chia seed pudding is creamy, sweet, crunchy, fresh and satisfying. This is a breakfast that will keep you away from the drive through…most of the time 😊
