I’m not sure how or why, but in our house, this breakfast recipe became known as egg in a bread. I think the technical “culinary” term is chicken in a basket. Whatever you call it, it is my favorite breakfast! This egg in a bread, or chicken in a basket, is deceptively delicious. It doesn’t look fancy, but I’d take this over steak and eggs any day! My husband makes this for me every Sunday morning before church. Maybe I love it so much because sometimes he gets up as early as 5:00 am to make sure I head off with a full tummy. Let me describe this heavenly taste treat for you…It’s a piece of bread with a little egg-sized hole cut out, an egg goes into the hole, and then it is topped with bacon and cheese! When cooked to perfection, which you always do, Honey ;), you cut into it and the yoke runs all over your plate. Then you use that little piece of bread that was cut out, which also has bacon and cheese on top, and use it to sop up that rich runny yoke. Once you try this, you’ll want to have it for every meal of the day!
To serve two people, you’ll need a good amount of butter, four strips of bacon, some grated cheddar cheese, four eggs, and two pieces of bread. I didn’t say it was low calorie, but it’s so worth it! My husband used to put one egg in the little hole, but I was kind enough to help him out, and suggested that he put a second egg yolk in there. Oh my, that really kicked it up a notch!
Melt a couple of tablespoons of butter, coat both sides of the bread in the butter, and then add another teaspoon inside each piece of bread.
Crack an egg into each piece of bread and add that second yolk. Next, you top with bacon…
and cheese and broil until the cheese is melted.
Cut into that yolk and be prepared for a heavenly treat! Egg in a bread makes me so happy! And, as an added bonus, I know that I will definitely make it through the entire church service without any embarrassing tummy growling.
