Who doesn’t love this stuff?! Buttery, limey (is that a word?) cilantro rice. I could eat mountains of this rice! I NEVER get tired of it. It starts with perfectly cooked white rice. Once you cross that hurdle, it’s a piece of cake (and I would choose this rice over cake almost any time). Today, I’m going to reveal the secret to cooking perfect white rice without a rice cooker. Don’t get scared…you can do it! No more sticky white rice for you, I promise!
I’m using Jasmine rice, which is a long grain, aromatic rice that is less sticky than a short grain rice. For this dish, it’s my preference. Add one cup of rice to your pan, 1 1/2 cups of water, and 1/2 tsp salt. We’re not baking here, but for this, we want to measure pretty carefully so that the rice cooks to the right consistency.
Stir everything together and turn the heat to high. When it starts to bubble, turn the heat to low, cover the pan, and set the timer for 18 minutes, that’s right, exactly 18 minutes.
Here’s the hard part, ABSOLUTELY NO PEEKING!!! No matter how badly you want to look at your beautiful jasmine colored rice, resist the urge! That is the secret to perfect Jasmine rice…every time! When the timer goes off, exactly 18 minutes later, remove the pan from the heat and allow to sit for 10 minutes. Still, NO PEEKING!!!
The moment you’ve been waiting for has arrived! Remove that lid and voila! The perfect pan of white rice. I told you you could do it!
Now, stir in 1 Tbsp of butter, 1 bunch of chopped cilantro, and the juice of 1 lime.
Serve yourself up a giant bowl of cilantro lime rice. After exercising all of that self control, you deserve it!
- 1 cup of jasmine rice
- 1 1/2 cup of water
- 1/2 tsp of salt
- 2 Tbsp butter
- 1 bunch of cilantro, chopped
- juice of 1 lime
- In a sauce pan, stir together the rice, water, and salt
- Turn the heat to high
- When the rice starts to bubble, turn heat to low and cover
- Set timer for 18 minutes
- When timer goes off, take rice off heat and allow to sit for 10 minutes
- Stir in butter, cilantro, and the juice of 1 lime
- Remember, no peeking! Be sure to keep the lid on.
