Creamy leek dip is a hot, tangy, creamy dip with a hint of spice that is to die for! This is a great appetizer for company, great for game day, heck it’s just plain great any time! Because this dip solidifies as it cools, it is best served piping hot!
Let’s be honest, creamy leek dip is basically a bowl of leeks and hot melty cheeses. There’s nothing wrong with that, but to make it “healthy”, I cut up all these colorful veggies for dipping.
However, you can’t have dip without chips…can you? I think not!
It wouldn’t be creamy leek dip without leeks. Leeks have a mild onion taste that adds great flavor to this dip! Thinly slice the white part of the leek.
Often times, leeks are very gritty. Sand and dirt get in between all those layers as it grows. To make sure they are clean, put them in a bowl of water and the sand and dirt will sink to the bottom. After soaking for a few minutes, take them out of the water and drain them on a paper towel.
Then, cook the leeks along with some garlic in melted butter and season with salt, pepper, and a tiny bit of cayenne pepper for that hint of spice.
Once the leeks are translucent, add some milk and cook until the milk is warmed. Next, add cream cheese and goat cheese and continue cooking until the cheeses are melted. This creates the creamy texture. Finally, add some fresh herbs, some lemon zest, and some lemon juice for a burst of flavor. I used chives and thyme from my herb garden but you can add any herb you like.
Transfer the dip to a serving bowl and start dipping (be sure not to double dip)!
