Figs will only be around for a short time. How about a fig flatbread! I love figs and I love flatbreads, so I thought to myself why not put the two together? This flatbread has a whole bunch of my favorite foods…caramelized onions, bacon, figs, goat cheese, and arugula. You can easily make your own flatbread or you can use store bought. No judgement here😊.
I have a super easy recipe for a crispy flatbread that I whipped up in no time at all, and with ingredients that are always in my pantry.
I baked the flatbread for about 5 minutes before topping it to keep it extra crispy.
First I spread out some caramelized onions.
Next, I topped it with some bacon, some figs, and some goat cheese, then baked it for 5 minutes.
Finally, I tossed some arugula in some oil and balsamic vinegar and put that on top of the baked flatbread. I always love salad on top of my flatbread or pizza, and arugula is my favorite lettuce. It has a sort of peppery flavor that is just plain delicious, and it pairs really well with goat cheese and balsamic vinegar.
Fig flatbread is a great way to enjoy figs for the short season they are available! If you’re a fig lover like I am, you might want to check out my bacon wrapped goat cheese stuffed figs😉.
