Italian Sausage Casserole

Four ingredient baked Italian sausage casserole is a favorite for our family for dinner! It’s fast, flavorful, easy, and delicious! With some self control, there will be enough left over for lunch tomorrow!

How To Make Italian Sausage Casserole

First, start your rice. To a heavy bottomed sauce pan, add 1 cup of Jasmine rice and 1 1/2 cups water. Bring to a boil, cover, reduce the heat to low and cook for 18 minutes. Remove the pan from the heat and let the rice sit for 10 minutes. Fluff with a fork.

Next, in a skillet, brown 1 pound of Italian Sausage.

Mix together the rice, the sausage, a 15 ounce can of roughly chopped stewed tomatoes, and 1 cup of grated mozzarella cheese. Add to an oven safe baking dish.

Top with another cup of grated mozzarella cheese and bake at 350 degrees for 45 minutes.

Can This be Made Ahead of Time

Italian sausage casserole can be made a day ahead of time. Add the mixture to the baking dish but wait to add the cheese topping until ready to bake. Because it will be cold from the refrigerator, add 10 minutes to the baking time.

Storage and Reheating

If you have any leftovers, store them covered in the refrigerator for 3-4 days. Reheat in a 350 degree oven for 15-20 minutes, until warmed through.

Italian Sausage Casserole

Ingredients

  • 1 cup Jasmine rice
  • 1 1/2 cups water
  • 1 pound Italian sausage
  • 1 15 ounce can stewed tomatoes roughly chopped
  • 2 cups shredded mozzarella cheese

Instructions

  • Preheat oven to 350 degrees
  • To a heavy bottomed sauce pan, add the rice and water. Bring to a boil, cover, reduce the heat to low and cook for 18 minutes. Remove the pan from the heat and let the rice sit for 10 minutes. Fluff with a fork.
  • Brown sausage
  • In a bowl, mix together the cooked sausage, the cooked rice, the roughly chopped stewed tomatoes, and one cup of the cheese
  • Put mixture into a baking pan
  • Top with remaining cheese
  • Bake for 45 minutes

Notes

For a spicier casserole, use spicy Italian sausage.
To make ahead of time, add mixture to baking dish but don't top with cheese. Cover and refrigerate for up to 1 day. Top with cheese and bake. Because the casserole will be cold from the refrigerator, add 10 minutes to the baking time.
Store leftovers covered in the refrigerator for 3-4 days.
Reheat in a 350 degree oven for 15-20 minutes, until warmed through.
