I was walking through the grocery store, when I saw these beautiful carrots. My very first thought was, “that would make a great picture!”. I know, it’s kind of weird that a bunch of baby carrots would create that kind of response from me, but what can I say, these carrots were speaking to the artzy in me!
I cut the tops off to keep them moist, washed them, and seasoned them, and put these beauties into the oven at 400 degrees for 30 minutes.
A handful of goat cheese and a sprinkle of chopped parsley, and my food art was complete! And, guess what…these carrots taste as good as they look!
- 1 bunch baby carrots
- drizzle of olive oil
- 2 tsp thyme, chopped
- 2 cloves garlic, minced
- salt & pepper to taste
- chopped parsley and goat cheese for garnish
- Preheat the oven to 400 degrees. Cut the tops off the carrots and drizzle with olive oil. Sprinkle with rosemary, garlic, salt, and pepper and toss. Bake for 20 minutes. Garnish with parsley and goat cheese.
