I have some cilantro, some quinoa, some shredded lettuce, some jalapeños for heat, some tomatoes, some radishes for a little more spice, some cooked chicken, some scallions, some black beans, and my yummy homemade honey chipotle lime salad dressing. Substitute any of your favorites, this is just an example of what I had in the fridge this week.
Not only did I make my salad in a jar, but I made the dressing in a jar too. I added lime juice, minced garlic, adobo sauce, coriander, cumin, salt, pepper, oil, and honey in a jar and shook until mixed.
I layered all of my ingredients, saving the lettuce for last so it doesn’t get soggy. No one wants soggy lettuce! You can make enough of these all at once to last you the whole week. If you are someone who doesn’t like to eat the same thing over and over, salad in a jar is perfect because you can change up what you put in each jar. You could even switch up the salad dressing.
At lunch time pour in the salad dressing, make sure your jar is sealed tightly, and shake it up!
