Because Thanksgiving dinner is such a heavy, carb loaded meal, I like to serve something fresh to lighten things up.
This fresh spinach salad with apples, pomegranate seeds, pecans, and goat cheese tossed in a light, yet tasty vinaigrette is a great way to do just that!
This is a really simple salad that can be put together in no time at all…as long as you harvest those pesky pomegranate seeds ahead of time. If you don’t want to wrestle with the pomegranate, dried cranberries would be a good substitute. In fact, my husband says he prefers them.
The vinaigrette is made from olive oil, lemon, apple cider vinegar, poppy seeds, and honey.
Just add the ingredients for the vinaigrette to a mason jar and shake until combined.
Then, in a large bowl toss the spinach, apples, and pecans with the vinaigrette and top with pomegranate seeds and goat cheese.
This beautiful, Fall looking salad will definitely lighten up the Thanksgiving meal!
