This super simple super tasty taco salad is just what the doctor ordered on a SUPER hot day in Kansas! If you leave out the chicken, you don’t even have to cook to enjoy this scrumptious meal! This salad is so delicious, you would never guess that it takes only minutes to put together.
I cut up some romaine lettuce, rinsed it, and took it for a spin in the salad spinner. Easier yet, you could buy a bag of pre washed, chopped romaine lettuce.
The most difficult part of making this yummy salad is dicing up some tomatoes and opening a can of black beans.
The secret to making this taco salad so tasty is the dressing. I used equal parts of ranch dressing and balsamic dressing. The creaminess of the ranch and the tanginess of the balsamic are so good together! Toss the lettuce, tomatoes, and beans in the secret dressing and you’re almost finished!
Next, I topped my salad with some grilled chicken, which is completely optional. Ground beef seasoned with your favorite taco seasoning would be another great option. But meat free it is still fabulous! Then, I added some cheddar cheese that I bought already grated in a bag, and I topped it off with some crunched up tortilla chips.
