This is my version of Swedish Meatballs. It’s maybe not the ordinary (meatballs with brown gravy), and maybe not so healthy, but it is all natural and sometimes it’s ok to indulge just a little bit, right? Around our house, these are called SCHU’-WE-DISH meatballs, and we always enjoy them during the holidays. For some reason, we are still celebrating the holidays at the end of January (that’s code for I haven’t taken down the Christmas tree yet), so I thought it would be fun to enjoy them one more time.
The sauce is made with butter, sour cream, and a couple of spices. How much better does that sound than brown gravy? Then add basic meatballs and you’ve got yourself a celebration!
All I need is a fork and a piece of bread to sop (not sure if that’s in the dictionary, but who cares) up that sauce!

- 1 stick butter
- 2 cups sour cream
- 1 Tbsp onion powder
- 1 tsp dried parsley flakes or 2 Tbsp fresh parsley, chopped
- 3 lbs meatballs
- Melt butter and let cool slightly
- Stir in remaining ingredients and simmer on low until combined
- Add meatballs
