Tomato and peach salad is like summer in a bowl! With the eerie sound of the cicadas and with school starting this week, I wanted one more taste of summer before it’s over 😥. This super fresh and yummy salad fits the bill. Nothing says summer like tomatoes or peaches. Tomatoes and peaches together, you ask? That’s right, tomatoes and peaches! For some reason, those two unlikely companions work really well together. It sounds like an unusual combination of ingredients, but that unusual combination of ingredients makes for an unusually tasty salad!
The great thing about tomato and peach salad is that there really isn’t a recipe that you need to follow. Use as much or as little of each ingredient you like. You can use whatever kind of tomatoes you like. You can use peaches or nectarines, and there is no cooking involved. For this salad, I used white peaches, roma tomatoes, and an heirloom tomato.
For variety and to add a little interest to my salad, I cut the tomatoes into different shapes. Then, I sliced up all of those juicy peaches into wedges, and thinly sliced some red onion. You’ll also need some greens. I used arugula, but I think watercress or spring greens would be great too. There is also cheese involved. What kind of salad would this be with no cheese?! I’m using feta, but I think goat cheese would work really well.
Make a slightly sweet vinaigrette by adding oil, vinegar, honey, mustard, salt, and pepper to a mason jar and shake to combine. Add the tomatoes, peaches, red onions, and greens to a large bowl and toss in the vinaigrette. Sprinkle the cheese and some toasted nuts on top and you’ve got yourself a delicious salad that screams summer!
I have to admit, I used to be very closed minded about what I ate. My oldest son got me to start trying some different things and it opened up a whole new world of flavors for me. Get out of your comfort zone and try something new. Peach and tomato salad is a great way to enjoy the final days of summer!
