Pimentos are cherry peppers, which are small, mild peppers that are sweet in flavor. Rather than using cherry peppers, I used roasted red bell peppers, which are also mild and sweet in flavor. To roast the red peppers, brush the outside with oil and broil until the skin is charred on all sides, about 4-5 minutes per side. Seal the charred peppers in a paper bag or in a bowl covered with plastic wrap and let sit for 10 minutes. Remove the skin and seeds and chop into small pieces.
