Tater Tot Casserole

- 1 pound ground beef
- salt & pepper to taste
- 1 can condensed cream of chicken soup
- 4 ounces cream cheese
- 1/4 cup gochujang ketchup
- 2 cups grated cheddar cheese
- 1 bag frozen tater tots
Preheat oven to 400 degrees
In a skillet over medium heat, brown the ground beef
Season with salt and pepper
To ground beef mixture, add soup, cream cheese, ketchup, and 1 cup cheese
Cook until heated through and mixed together
Transfer to an oven safe baking dish
Top with a single layer of tater tots
Bake for 20 minutes
Remove from oven and top with remaining cheese
Bake another 10 minutes
If you can't find gochujang ketchup, use regular ketchup and add a teaspoon or a tablespoon, depending on how spicy you want it to be, of gochujang or sriracha.
You could easily sneak a few vegetables into the ground beef mixture by adding some frozen corn or green beans.
