Ingredients

  • 5 pounds russet potatoes peeled and diced
  • 1 stick butter
  • 2 tsp salt
  • 2 cups heavy cream
  • 3 whole cloves garlic smashed
  • 1 cup sour cream

Instructions

  • In a large pot, cover the potatoes with water
  • Bring to a boil, lower the heat and cook until they are fork tender, which will take about 10 minutes after they come to a boil
  • Drain, put back in the pot, cover and let rest 2-3 minutes
  • Add butter and salt to pot, cover and let rest until butter starts to melt, about 5 minutes
  • While potatoes are resting, warm heavy cream and garlic cloves on medium heat
  • Once the heavy cream is warm, discard the garlic cloves
  • With a potato masher, begin to mash the potatoes gradually adding cream until desired consistency is reached
  • Stir in sour cream

Notes

Russet potatoes, also known as Idaho potatoes or bakers, are high in starch and mild in flavor and work best for this recipe.
Fork tender means when a fork can be inserted with minimal resistance.
For smoother potatoes, mash with an electric mixer or use a ricer.
