Greek chicken salad is one of my very favorite salads. It’s a fresh, hearty salad that is sure to satisfy your hunger! My version isn’t quite like the traditional greek salad which typically has cucumbers. There are very few things I don’t like. Cucumbers are at the top of that list! Since I am a grown up and this is my salad, I will not be adding cucumbers. Just in case you were wondering, melon is also on that list. Actually, I think melon is at the top and cucumbers are number 2.
There are very few ingredients involved, which I love. Romaine lettuce, red onion, kalamata olives, tomatoes, parsley, feta cheese, and a delicious vinaigrette are all you need for the salad. Did you notice that cute little red pepper in the bowl with the olives? Well, don’t let it fool you. That cute little trinidad scorpion pepper that my son grew in his garden about took me out! Before adding it, I texted him and asked if I would regret putting it in my salad. “Sure, its kind of fruity tasting.” he said. After eating that bad boy, I had a whole lot of regrets!
My delicious vinaigrette is really simple to make. To a mason jar I added oil, red wine vinegar, garlic, and the zest and juice of a lemon, then shook it up. That’s it!
Not only do I toss my salad in the vinaigrette, but I also marinate my chicken in it for about 30 minutes before grilling. The marinade makes the chicken moist, tender, and flavorful. Be sure to let the chicken rest a few minutes before slicing it to keep it from being dry.
After tossing the salad in the dressing, I sliced the chicken and laid it over the top.
