Homemade Mayonnaise

Ingredients

  • 1 egg
  • 1 Tbsp vinegar or lemon juice
  • 1 1/2 tsp dijon mustard
  • 1/4 tsp salt
  • 1 cup oil

Instructions

  • Put the egg, vinegar, mustard, and salt in a food processor and mix together on high speed
  • Slowly drizzle in the oil until the desired consistency is reached

Notes

For a thinner mayonnaise, use the whole egg or for a thicker consistency, only use the egg yolk.
If your desired thickness has not been reached after slowly drizzling in 1 cup of oil, add up to another 1/2 cup of oil until the mayonnaise is as thick as you like.
Store in refrigerator for up to 10 days.
